Cauliflower sandwich v.4 launches today

Just out of the skillet, the smell of the pan-seared cauliflower, is amazing.

We made a couple of tweaks to the eggplant spread recipe from last year. We simplified the method a bit on a component that we call balsamic onions. Instead of stewing onions in balsamic, we are adding a balsamic dressing to caramelized onions. We also added a bit of cooked white beans to increase the protein, improve the texture and add some yield. It’s crazy how much eggplant shrinks after roasting. Something like 65% yield loss by weight.

Cauliflower sandwich v.4 at all locations starting today. As always, we’d love to know what you think.

    Tried this today at LMA and really enjoyed it! And I’m pretty fussy about vegetables, so that means a lot. Will be having it again, would love to know the nutritionals, please!

    Tried at MIT yesterday. Wonderful!!! The bean spread was a bit messy, but it was oh-so-delicious. Maybe more cilantro next time? I’d also love the option of extra sriracha. Can we have a current recipe?

    Tried this today. It was delicious, but I couldn’t taste and sriracha so lucky I had some handy. It makes a difference. The eggplant spread is messy.

    Like others have asked would love to know nutrional information.

    I tried this last week–I’m a BBQ Seitan girl, and it’s hard for me to steer away from it because I’ve tried everything else and nothing beats it for me (with some sriracha, of course!). However, I tried this last week and thought it was ABSOLUTELY DELICIOUS.

    I’m not a vegetarian 100%– I still eat chicken & fish here in there once in a while. However, I can easily go 5-7 days in a row without having meat. That being said, I get bored with the typical roasted veggies/pesto/panini-esque sandwiches. If anything, I love rice bowls because I love flavors and sauces. This sandwich = great spread, texture, and flavors!

    Had it again today :)

    Any nutritional info on it?

    Just had this tonight-delish but totally agree that way more Sriracha is needed. Also is there nutritional info available on it?

    Pauline — Thanks for the note! I keep thinking that too. I’ve started asking for more Siracha when I order one. Maybe we should just up the default?
