Lindentree dropped off CSA shares at the HUB a few minutes ago. I was really excited and tore into my box. I was asking Moira and Aaron what I should do with the huge fennel. They suggested 1.) roasting it with cheese melted over the top or 2.) breading it and baking it. I’ll still need to figure out what to do with the green parts. Any suggestions?
If you’re a Lindentree subscriber too, here’s what you’ll be getting this week. The fennel sort of dominates the picture, but there’s also:
- a bouquet of flowers, looks like snapdragons
- carrots
- beets
- basil
- scallions
- kale
- head of lettuce
- 1 zucchini

Chop up the fennel fronds and use them like you would use herbs! Generally they can be sprinkled right back over the dish you’re creating with the bulb. That’s what we do.
You can try making a soup with the fennel fronds, or you can stuff them into a fish to be cooked – it flavors the flesh rather nicely.
You could make a pesto with the green parts. Blanch them first, makes a tasty sauce that freezes well and uses a lot of the bulk from the fennel.
