One of the things we’re not quite on top of yet is the sourcing/ organization. It’s tough, the quantities are a moving target, and we’re making daily changes to the menu. All this means that each day we take stock of what we have, what we need, and figure out how to get from where we are to where we need to be.
I bought a laminator at Staples this past weekend and am hoping soon to find the time to sit down with Rolando and make nice organized lists that we can use again and again. We’ll also be codifying key elements of the operation. Recipes are already being captured, but we need to capture things like sandwich assembly techniques, etc.
