Filtering maple syrup

By ayr April 16, 2009

The syrup on the left is unfiltered, the one on the right is filtered. I never knew syrup was filtered until my most recent trip to South Face Farm. Wild hunh? So what are they filtering? The sap has a ton of minerals when it comes out of the tree, and that’s what they are filtering out.

Tom told me that he sells unfiltered syrup to one customer a year. The rest like it clear, which is why he runs it through the filter. Now I’m sort of curious to try it unfiltered. More pictures after the break.

That’s the filtration unit.

And this is a picture of the minerals that come out of the syrup.
