Orzo is a pasta, but it gets used like a rice. We’ve done orzo salads before, I think last year we did one with butternut squash. This one is Rolando’s idea. It’s got a ton of lemon, some feta cheese, dill, and capers. Rolando says he’s always liked the combination of dill, capers, and lemon.
