Spicy broccoli salad

If it’s done right, I think this is one of my favorite salads here. Barely cooked broccoli (stems too), red cherry peppers and Thai chile peppers, some green onions, vinegar.

I asked Ayr and Rolando the story behind this salad. Nobody remembers how we came up with it. Ayr said he always made roasted broccoli tossed with butter and cayenne pepper. Rolando had seen a chef doing something like it. They both wanted to do something using ingredients we were already going to be ordering (Thai chiles and red cherry peppers that go into our hot sauce).

We’ve run it a couple times in the past month w/Mass broccoli, and it’s been awesome. But, if you over-cook the broccoli it’s no good. You have to boil it for about 3 minutes and shock it in ice water immediately. If you had it today, let us know if we got it right.
