Check this out, fresh chickpeas. Like a lot of other spring vegetables, these legumes are only available fresh a couple weeks out of the year. We see and process a lot of chickpeas at Clover. They are found in our hummus, falafel, soups and salads. But we never see them like this. These guys are a beautiful spring green color. I found them over the weekend at Formaggio Kitchen. I like these chicks steamed with salt and a drizzle of oil, but I have had them charred on a grill too, which is pretty amazing.
