Japanese side salads

We stopped by Tampopo Ramen after work the other day. They had these cool side salads.

The best one was a Burdock root and carrot salad. Really nice thick shreds of burdock root. I wonder how they made it – blanched? Pickled? Really simple and really delicious. Could be fun for a Clover salad or a topping on a sandwich.
