Most people think of cottage cheese in a certain way. Usually that way is…not good.
Luke, a farmer from Brookford Farm, came to Food Dev with cottage cheese that he makes on his farm in New Hampshire. Cottage cheese is curds and whey, and when it’s made with good fresh milk, it can be absolutely delicious.
Luke added frozen Maine blueberries and a drizzle of maple syrup. It tastes like ice cream! We thought this could be really fun for the retail fridges. Kind of a dessert, right, or at least a Clover version of a dessert? These are in the fridges today, if you try it, please let us know what you think.
