Knife Skills 102 is all about 3D cuts. These are more complex cuts that we use every day in the restaurant. When developing this class we asked ourselves – what sorts of fruits and vegetables are our restaurant teams cutting for fruit salads, lemonades, and sodas?

Prerequisite: students must take Knife Skills 101 before taking this class! Employees are required to have taken and passed the Knife Skills 101 test as well.

About the Instructor:

Chris Anderson, VP of Food at Clover, leads up sourcing and food development for the Clover menu, has a degree in culinary management and nutrition from Johnson and Wales University, and was a personal chef before joining Clover in 2009. He currently holds the record for the fastest knife skills time in the company

Please note – this class will only be taught for groups of 2 or more. We will notify customers in advance if the class doesn’t have enough participants, and they will be able to sign up for a future class instead!
