Sunchokes (also known as Jerusalem artichokes) are the root part of a flower from the daisy family. Native Americans first started cooking with them, and they’re native to this region. They sort of look like tiny knobs of ginger, but have more of a potato-y taste and texture. We started using them in early 2016 and haven’t looked back – they have a deep, rich flavor with both savory and sweet qualities.

Our Sunchoke Breakfast Sandwich is back! This time with a buttery twist – truffled butter, a soft-boiled egg, and crispy fried thin sunchoke slices all in our house-made pita bread!
