Honestly, Lucia and I are still getting used to writing words like “Chicken” and “Pork” in our emails, but Clover’s partnership with Tender—our favorite local neighborhood plant-protein magicians—means that the Kitchen team is cooking up all sorts of amazing new sandwiches for our menu.
This week, we’d like to introduce you to the new BBQ Pulled Pork Sandwich.
It starts with Clover’s BBQ sauce, the stuff of legend: conceived on a research trip to Texas, it’s a perfectly balanced salty-sweet-spicy blend of molasses, ketchup, cumin, chipotle chilis, vinegar, and—POOF!—smoke. We sear Tender pulled pork in-house until it just caramelizes, then we top it with a crunchy summery slaw made from Red Fire Farm fennel, onions, and peppers. A creamy dill dressing ties it all together, herby and smooth.
Customer Colleen took the time to shoot us this note after she tried it:

I have to say, I agree with Colleen. Even as a sometimes meat-eater, I knew Tender’s pulled pork was something special from the very first time I tried it. They brought it to our Food Dev meeting a year and a half ago, doused in soy sauce and nearly arranged in cute little baos. That bao = Wow.
