The Butternut sandwich is back for the holidays. This is one of my favorites. This is actually the third rotation of this sandwich. I think this was the second seasonal sandwich after the Basil sandwich.
The sandwich starts out with a white bean spread, seasoned with maple, sage and cinnamon. Next, roasted butternut squash seasoned with a little aleppo pepper. Then, the roasted red onions tossed in a light vinaigrette with thyme. The sandwich is filled out with Swiss chard.
It’s been running at MIT all week getting off the ground and it has spread to the trucks today. Our restaurants will have the Butternut by Monday.
