Food Development

“Food Dev” has been an important part of Clover since the days of the first food truck.

We’d make something we love eating, put it onto the menu, with very little “chef ego” involved.

Then we’d interview people after they ate their meals, and make changes based on their feedback. We were worried about losing this important aspect of Clover as we grew. Instead it’s expanded. We hold a weekly Food Development Meeting at CloverHUB (1075 Cambridge St, 02139) that’s open to the public. We taste new ingredients, try menu items “championed” by staff or customers, and talk about QC across the company. It’s a really fun time, and a chance for you to peer into a process that is totally hidden at most companies. We’ve gotten some of our best menu ideas from staff members (hi Carrot Sandwich) or customers (hello Panelle). We invite you to participate in Food Dev.

Note: public food dev meetings are currently on hold until we complete renovations on CloverHUB. Look for them here, returning in January 2023.

It was inevitable. Our meal box program had to find its way into restaurants at some point. A bunch of you have been asking if we can sell “on demand” meal boxes in our restaurants – for those times when you have last-minute dinner guests or forgot to subscribe by the deadline. So we’ve been easing into the process of combining one part of Clover with another.

Brussels Sprouts are extra sweet this time of year, and King Brussels, in his infinite wisdom, has cooked up a Brussels Week in our meal boxes. Every single subscription box will contain a recipe inspired by brussels! This is the first time we’ve explored a seasonal theme across our entire lineup and we’re excited to dive in.

23 years ago this month NASA lost a spacecraft due to a unit conversion error. In September 1999 the Mars Climate Orbiter concluded its nearly 10 month journey to Mars by burning up, either in Mars’ atmosphere or in accidental orbit around the Sun.

I think veggie burgers can be amazing. But I grew up cringing at them. I’ve had so many that were dry or mushy or tasted bland or bad. But that doesn’t have to be the end of the story.

Yesterday was Jason’s last day at Clover. Jason came on board as our executive chef last year. His job was to develop recipes for our meal box program, so if you’re a member of Taco, Pasta, Burger, or Soup, you’ve likely been enjoying some food from Chef Bond.
