CloverDTX Advent Calendar is up

I took my mom to CloverDTX over Christmas weekend to do something that’s become a Clover pre-open tradition since we opened CloverKND. We ask the contractors to paint over the windows with white paint. Then we use a blade to scrape out little windows, and I write messages in the windows. If you want to see for yourself, head to 27 School Street in Boston.

We’ve also been sharing a list of steps it takes to open a restaurant on the side of the restaurant. This is something we started doing after we opened CloverHFI.

That blue poster in the left-hand side of the restaurant is a hiring poster. We’re still looking for 2 or 3 folks to round out the DTX team, so apply online if you’re interested in joining.

How to celebrate tomato season

We had no idea what the word Panelle meant when a customer first told us about it ten years ago. This customer grew up in Sicily, the triangular island south of mainland Italy. Tender now on the menu

About a year and a half ago, at an open-to-the-public food development meeting at Clover, we blind taste-tested a new plant-based pulled pork. This wasn’t a totally new thing for us to do—as a company with a climate mission, we tend to get a lot of samples of plant-based everything, and we love trying all of them. We’ve tried mycelium-based mushroom meats, wheat-and-soy nuggets, and burgers made from kelp. One bite in, and it was clear this pulled pork was special.

Squeaky paneer, mint cilantro chutney, chaat, and our first-ever collab with a local chef. Remember when Pushpir came into the kitchen and schooled us on Northern Indian food? That was 2013.
