Rachael here. This is my first post. You might have met me if you’ve eaten breakfast at the Harvard store. We’ve been working a lot on decreasing wait times in the morning. Something that I’m really proud of is the wait on breakfast sandwiches.
We boil eggs in small batches (2-12 at a time) and they take anywhere from 6 to 7 minutes depending on their size. The main problem we were having was when a lot of orders came in at once and we were left scrambling to boil more eggs.
A little trick that Rolando showed me a few weeks ago was to keep a pot of water right below a simmer. That way we spend less time waiting for the water to boil. If you’re by for breakfast, let us know how we’re doing.
