This picture marks the beginning of the Fennel Sandwich.
About a month ago, I got this huge fennel in my CSA from Lindentree Farm. I’ve always hated fennel. I hate licorice, etc. But I needed to do something with it, and I was thinking back to this fennel grapefruit salad we used to do when I first started at Clover. So I sliced and roasted up the fennel, but not for very long. Then I tossed it straight out of the oven with some grapefruit juice and grapefruit pieces and let it chill in the refrigerator for a while. The fennel pieces were really yummy, kind of crunchy and substantial. I thought it could be fun as the main part of a sandwich.
