If you’ve been following us for a while (or been by the truck when the generator dies), chances are you’ve learned something about all it takes to run a food truck. We noticed a bunch of people were interested in starting up trucks. So last summer we held Food Truck 101, a free seminar on operating food trucks. A bunch of people came. We talked food truck economics (labor, sales estimates, throughput, pricing, etc), food truck customers, and food truck food.
Now it’s time for Food Truck 102. We’re going to be featuring a panel discussion with veteran food truck operators. We’ll have Patrick from Bon Me, James from Roxy’s Grilled Cheese, and Diane from Cupcakory. We’re also trying to reach out to Betrous (the guy who operates a falafel truck on Mass Ave and helped Ayr get started). We’ll try to answer questions as best we can. No requirement that you’ve attended 101 to attend 102 : )
