We’re trying out Jaggery (palm sugar) lemonade at Harvard Square today. The sap from the palm tree is extracted, then cooked to a syrup, much like sugaring houses here do, with maple syrup. Jaggery syrup is further processed into solid discs, pucks and other various shapes. You can buy jaggery at Indian or South Asian markets.
We’ve made this a few times over the years and noticed that the flavor changes drastically, with the brand that you use. We are testing a few different ones. So far we like the one on the left from Mumbai. It tastes a little like, a subtle maple candy flavor mixed with hints of pineapple.
