Like my parents, Ali is Persian and Elizabeth is American. So we had a bond from the beginning.
I was so excited when I found out they serve kookoo sabzi. This is a great recipe to make if you have a bunch of greens/herbs to use up. It’s a greens frittata. I’m told that people eat it for fast food in Iran, they’ll put a huge slice of it in a wrap with pickles and other vegetables.
You can make this if you need to use up a ton of fresh greens. Chop around 6 cups of fresh herbs (dill, cilantro, parsley, spinach). Add some chopped walnuts and 3-5 eggs and make a batter. You can cook on the stove or bake it in the oven. You get a really interesting flavor by using this many herbs. There are a bunch of recipes online.
