Mike Sutton came to us from O Ya last year at this time. When he came on board as a development chef for us, we were all really excited to taste his first sandwich. He told us about a spread he makes with roasted eggplant, garlic, chili, and ginger. During our Food Dev meeting, we added fried cauliflower, pickled onions, and fresh watercress.
We called it the Asian Eggplant, and it was one of the most popular seasonal sandwiches we’ve ever featured. We’ll be running the Asian Eggplant at all locations for the next 2 weeks.
Speaking of chefs, we’re hiring one candidate for our next high-level chef role. You’d be hired into a 6-month program where you’ll run a Clover truck, join at these meetings, learn about our sourcing practices and culinary techniques, and get to test your ideas and recipes.
