For those who are new, the Nashville Hot Mushroom is an homage to the hot chicken at Prince’s in Nashville, which has its own dramatic origin story.
Our version gives you a little relief from the spice with a cooling corn mayo made from freeze-dried corn (customers have requested to buy vats of this stuff), fresh lettuce, and dill pickle coins. Then come the mushrooms. We get Blue Oysters from Rhode Island. We batter them in buttermilk and a smoky corn flour dredge. Then we fry them in extremely small batches throughout the day, which is key to their crispiness.
Finally we toss them with a spicy chili oil we make in-house from 4 kinds of chili peppers, a touch of garlic, and a few secret ingredients. I think I’ve convinced the kitchen team to let us sell this chili oil on our online grocery store, so keep an eye out for that : 0
