We have an awesome potato salad recipe that my wife, Heather, influenced. It has cilantro, red peppers, mayo. We call it potato salad on the menu board.
Some customers were asking for one without mayo. So I was thinking about German-style potato salad, which has whole grain mustard, pickles, dill. It has boiled red potatoes, and we swapped out the mayo for a vinaigrette, added dill instead of cilantro, and some chopped pickles. We’ll run the potato, mustard, dill again next week.
