We talk a lot about simple, clear flavors. I think this sandwich epitomizes that aspiration. It contains ingredients that come into season together. It has a savory apple spread with apples from Lookout Farms, purple top turnips from the Pioneer Valley Growers’ Association, some Grafton cheddar, and young spinach. The turnip is served cold, which is pretty bold. You have to have some amazing turnips and some amazing roasting techniques to pull it off.
