This is one of the first seasonal sandwiches that I created and it’s one of my favorites. It has a cilantro spread (silken tofu), roasted spiced sweet potatoes and a jicama salad (lime juice and a nice crunch). I just can’t get enough of that flavor from the roasted sweet potato.
This is the third time that we have run this sandwich. It’s sort of exciting to think that we have been serving sandwiches for 3+ years.
We re-introduced it at MIT this week. It will be moving to all locations over the next week or so.
