The sweet potatoes we had last week as our 3pm special were gigantic. The one Quin is holding here is almost as big as her head. We made them into fries for you with a sweet ketchup. For our rosemary fries we have a fry cutter we put a whole potato into. It has a square grid with blades that slices the potato into pretty uniform pieces. Sweet potatoes are too dense for the fry cutter, so we cut them by hand. The first day we made them as fries, I accidentally sent back all our chefs knives to Harvard Square on our afternoon resupply. Lucia said MIT did the same. Oops! Sandy broke down our giant sweet potatoes with a serrated knife, which is not an easy task.
