Soon if you stop in during the morning you’ll smell onions caramelizing for hot soups. Since our first winter on the truck, we’ve made soups from scratch. Over the next few months we’ll be testing some changes to the soups. Martina has been researching ways of storing garnishes. She found this adorable tiny version of one of our sandwich stations. The changes we’re thinking go something like this:
-3 soups each day at each location (our most popular soup: African Peanut all the time, plus a rotating brothy and a rotating creamy soup)
-A new soup container, shorter and widerÂ
-Delicious and hearty garnishes, including something creamy, like sour cream, olive oil, or yogurt, something crispy: like homemade sweet potato chips, and an herb, like chopped parsley or cilantro
