From Calabria with love, Thursday at CloverKND

When we went to Calabria last spring on our big food adventure, Enzo’s aunt had us over for Sunday dinner. It was one of the best meals I’ve ever eaten, rich with fennel, local cheese, meatballs in beautiful tomato sauce, and oranges right off the trees outside.

One of Enzo’s best memories from childhood is Sunday sauce. His grandma would make a big dinner and the centerpiece was a pot of tomato sauce that bubbled over low heat for hours and hours.

We’ll be testing version 1 of the Sunday Mushroom Sandwich this Thursday at lunchtime at CloverKND. It has a rustic tomato sauce based on Enzo’s family recipe, fried shiitakes from Rhode Island, local greens with lemon vinaigrette, and parmesan cheese. Tender now on the menu

About a year and a half ago, at an open-to-the-public food development meeting at Clover, we blind taste-tested a new plant-based pulled pork. This wasn’t a totally new thing for us to do—as a company with a climate mission, we tend to get a lot of samples of plant-based everything, and we love trying all of them. We’ve tried mycelium-based mushroom meats, wheat-and-soy nuggets, and burgers made from kelp. One bite in, and it was clear this pulled pork was special.
