You never start making a sandwich unless the bread is straight from the oven. And if you’re working the Mediterranean sandwich station, you have to call for bread from whoever is working the oven. If you’re working the oven, you only pull bread when it just about burns your hand to touch it.
For a while, we would keep a stack of bread over on the sandwich station, ready to make sandwiches with. But then they get cold too quickly. Enzo’s trick is to call for the exact amount of bread that you need. So you might hear us calling,”One bread/Two bread!” or if it’s during the lunch rush “Six bread please!” But never just “Bread!”
