Enzo came up with this sandwich last year to utilize a huge black bean harvest, one of the first of its size in the state. Enzo’s dad is Venezuelan and taught him to make black beans with lots of lime and cilantro. We’ve been selling this spread at Whole Foods and it’s been really popular.
The sandwich also has fried plantains, a local cabbage slaw (dressing made with cilantro and lime), and crispy rice on top.
