Every Tuesday 3pm – 4pm we have a Food Development meeting over at CloverHUB (1075 Cambridge St., Cambridge, MA). This is the gateway for anything that will show up on Clover’s menu. It’s raw, and like everything we do, completely transparent.
Everybody is invited. Typically we have customers, hourly staff, suppliers, and chefs join us. Chris, Vincenzo, and I (Ayr) form the “tasting committee,” making decisions about what new recipes or ingredients will join Clover’s menu. It’s a highlight of the week for us all.
