This was another fun detour on our trip. Rolando was good friends with Bill Kim way back at the start of his career. So they were really excited to reconnect. We should have made more time for this. As it was we were in a hurry to get to Metropolis, so Bill opened Belly Shack early and filled us with some great food. Bill is the first chef I’ve met other than Rolando who had a very serious and successful fine dinning career and left that to develop fast food. Not sure I know of anybody else who fits that description.
Obviously this is something Bill has thought a lot about, and his answer isn’t too far from Rolando’s. He’s really interested in doing something that can reach a large number of people, and something affordable, that could reach people in lower socio-economic groups.
