We want to help meat lovers become vegetable lovers. Tofu isn’t the best way to do that.
At least that’s what we’ve found in the past. We had a few failed tofu items on the menu. I like tofu. I grew up with it. But for many it’s just a 3rd rail. We’ve tried it in spreads and sauces. We’ve tried to feature it.
The only tofu sandwich we had success with is the zucchini, which has been very successful, just shy of blockbuster status.
You may have read that this past August we bought that tofu from Heiwa Tofu in Maine. It’s amazing stuff. And now Chris is experimenting with other uses for it. Not sue it will work. He and I are back and forth on this. We tried tofu skewers at food dev last week. He’s working on a BBQ tofu (pictured) that we’re going to try at food dev today.
