Matt B F@#ing loves the meatballs

OK. I had to bleep a couple of words.

This voicemail is from Matt Bettano. He left it for Chris (VP of Food) the other week.

I love listening to this. To be honest, it’s one of the most compelling things I’m facing right now as I’m trying to decide if this meatball sandwich should stay on our menu.

That photo I led with? I couldn’t find a picture of Matt. So I did the next best thing. That photo is from 10/29/2008 our first day of operation. Yeah, that’s a younger me. The night before I realized I’d forgotten 2 things: (1) a menu, (2) paper goods. The menu I decided to write on the side of the truck with an expo, and that started a whole thing from Clover.

The paper goods? Cups, napkins, etc.? I called my friend Jon from b.good. He said “I’ve got a guy” and hooked me up with Matt. Matt showed up the next morning in the parking lot of the shared commissary kitchen with boxes in the back of his car at 10am, just before we had to get going. He’s still hooking us up and supplies Clover with Butcher Paper and other paper goods. I asked him if it would be OK if I shared his sandwich review and he said yeah! Hope you enjoy it as much as I do!

Tender now on the menu

About a year and a half ago, at an open-to-the-public food development meeting at Clover, we blind taste-tested a new plant-based pulled pork. This wasn’t a totally new thing for us to do—as a company with a climate mission, we tend to get a lot of samples of plant-based everything, and we love trying all of them. We’ve tried mycelium-based mushroom meats, wheat-and-soy nuggets, and burgers made from kelp. One bite in, and it was clear this pulled pork was special.
