The hood is a massive piece of equipment. This guy is responsible for getting the exhaust from our cooking out of the kitchen. We’ve built it just long enough for everything in the restaurant. If we want to add more stuff under there someday we’re going to have to move the oven outside of the hood (which is an OK thing to do).
We’re using Scott Sheet Metal for this work. Jim’s doing a great job. He’s also helping us with all of the stainless you’ll see on walls in the restaurant (including the bathrooms).
