This is a sandwich Enzo developed last year. It works perfectly this time of year, because summer squash is just coming up. We changed it up slightly this year using raw squash instead of roasted squash after a little “raw vs. roasted” experiment Enzo ran at the truck.
The sandwich starts with a pepper relish we make using garlic, red onions, coriander, mustard seeds, bell peppers. It gets some Grafton cheddar, a couple slices of raw summer squash marinated with aleppo pepper, salt and a little bit of oil, and some shredded napa cabbage tossed with cider vinegar, sugar, salt and coriander.
We’ll be looking for feedback on this one as it rolls out everywhere this week.
