West coast what?

Rolando and I just got back from a trip out to the West Coast. We visited LA, SF, Portland. We ate, and ate, and ate, and ate. Coffee shops and roasters for breakfast, taco trucks for lunch and dinner, fast food joints everywhere in between, and a few fine dining experiences just to make sure we didn’t starve.

When we got started we decided we’d force ourselves to take a culinary adventure once a year. The idea is that we’ll keep ourselves up to date and inspired, and bring back great ideas to Clover. Someday this may involve tasting the fruit nectars of Brazil, or sampling street vendors in India. This year: a $109 JetBlue flight across country and staying with friends.

I’m going to be rolling out little posts covering some of our adventures. This picture above is of Rolando holding Kogi, the most hyped food-truck in the world. This was on day 1, at 12:30am PT, jetlag what?

How to celebrate tomato season

Fruity, juicy, spicy, sweet. We had no idea what the word Panelle meant when a customer first told us about it ten years ago. This customer grew up in Sicily, the triangular island south of mainland Italy. Tender now on the menu

About a year and a half ago, at an open-to-the-public food development meeting at Clover, we blind taste-tested a new plant-based pulled pork. This wasn’t a totally new thing for us to do—as a company with a climate mission, we tend to get a lot of samples of plant-based everything, and we love trying all of them. We’ve tried mycelium-based mushroom meats, wheat-and-soy nuggets, and burgers made from kelp. One bite in, and it was clear this pulled pork was special.

Squeaky paneer, mint cilantro chutney, chaat, and our first-ever collab with a local chef. Remember when Pushpir came into the kitchen and schooled us on Northern Indian food? That was 2013.
