Why maple, why now? A magical thing is happening soon in New England, when nighttime temperatures drop to freezing, but days are warm enough for the sap to run. It’s maple sugaring time! Tapping, boiling, and pancake-ing.
Since the early days we’ve loved celebrating the sap of our local maple trees. Remember pancake brunches at the food truck and at HSQ 1? This year we’re going all out on maple, starting with a collab with the most amazing forest farmers at New Leaf Tree Syrups.
The syrups in your box were tapped by Michael Farrell from the forests of Vermont and New York. All the best chefs are fans of his; in fact we first met him at the Stone Barns Center for Food and Agriculture. If you make it in for this collab, you’ll get 2 surprise bottles out of the following: Maple Beech syrup, Maple-Smoked Hickory Syrup, Maple-Walnut Syrup, and Maple-Birch Syrup. Each one tastes different. Do a side-by-side tasting in front of your next stack of pancakes and go on a culinary adventure, use them in savory cooking, or mail one to a loved one not lucky enough to live in New England. PS. This Thursday (3/4) is our final Snowed In Box delivery! We were hoping to keep this on the menu a bit longer but with logistics and scheduling we realized we have to bring it to a close one week earlier than originally planned.
