This is our hood vent. It sucks in all hot air from our oven and fryer, and blows it out of the top of the truck through a ventilation system. Which means everyone hates it in the winter, because it removes all the heat, but you have to love it in the summer. It stopped working at the height of the hottest part of last week, which literally brought the temperature in the truck close to 100 degrees and humid. The reason the fan broke is because I hadn’t trained everybody to always keep the hood on. I took the blame for it, called Grainger for a new duct fan ($457) and installed it that same day. Tom did the electrical work, I cleaned about the grease, and 2 hours later we had a workable environment.
