Black beans are my favorite bean. I feel in love with them when I lived in Florida. There’s is something about the combination of rice, black beans, lime juice and cilantro that’s a home run. I think it’s how sweet the bean gets after you soak it and cook it with onions, red peppers, onions and cumin.
We use black beans in our seitan chili. We’ll be cooking it up tomorrow, try it if you’re by.
